Christmas gifts from your garden - liqueur fruits
Now you can cheat by buying fruit for this, but if you're any kind of a gardener, you'll have been growing some fruit in the year, and if you've frozen or preserved it, this is the time to reap the rewards and share the bounty with your nearest and dearest, by making some liqueur fruits. It's possibly one of the best ways to prepare for Christmas and you may find it's the only Christmas chore you actively look forward to! These need to be made 6 - 8 weeks in advance to get the full flavour, but even a week before they'll taste good and make great gifts.
You need
- Fruit from your garden
- Alcohol
- Sugar
- Sealable jars and rubber seals
- Pretty fabric and elastic bands
- Labels
Suggested recipes:
Blackberries in Kirsch
- 700 g blackberries, fresh or frozen
- 200 g redcurrants ditto
- 250 caster sugar
- 500 ml Kirsch
Layer the fruit and sugar in three 500 ml jar. Pour the kirsch over to cover completely, seal with rubber ring and store in a cool dry place.
Pears and cherries in Port
- 1.5 g firm pears, peeled and kept in water with lemon juice in until needed
- 500 cherries, fresh or frozen
- 500 g caster sugar
- 1 cinnamon stick
- 750 ml Port
This time you boil the port, sugar and spices together until the sugar dissolves. Add the pears and simmer for 20 minutes to soften the pears. Stone the cherries while this is happening. Spoon out the pears, adding the cherries and place the fruit in a 2.5 jar. Boil the liquid until it has reduced to about 500 ml and then pour over the fruit. Seal the jar, put in a pan filled with water in a 150 degrees centigrade over for an hour to seal. Store for six weeks.
